Kale and Apple Salad

Ingredients

    Serves 4

  • 2 Tbsp. lemon juice
  • 2 Tbsp. olive oil
  • 1 bunch kale, ribs removed, leaves thinly sliced
  • ¼ cup dates, cut into thin slivers
  • 1 apple, peeled and cut into thin wedges
  • 3 Tbsp. slivered almonds
  • 1 oz. Pecorino Romano cheese, grated
  • freshly ground pepper
  • kosher salt

In a large bowl, whisk together lemon juice, olive oil, and ¼ teaspoon salt. Add the kale, toss to coat, and let stand for 10 minutes.

Add dates, apple wedges, almonds and cheese, season with salt and pepper, and toss well.
